Exhibitions Taste takes shape at “supersalone” Add to bookmarks Identità Golose Food Courts: a host of great chefs serve up a food experience with the accent on new celebrations and creativity The debate around food – as in not just nourishment but also as a source of pleasure and socialisation – has seen new levels of public engagement and is now addressing fundamental issues such as its environmental sustainability, our health, modern lifestyles and the new places of consumption. Design, which has always taken stock of and often anticipated cultural, socio-economic and anthropological trends, has firmly embraced the world of food and hospitality, demonstrating creativity, curiosity and great innovative capacity when it comes to designing the “table” in its broadest sense. An inevitable consequence of this is that “supersalone” has also taken this theme on board, along with its protagonists and its language, bringing in Identità Golose Milano – International Hub of Gastronomy as part of the event, because food is a product on the same level as any other, and has always evolved on the basis of human creativity and need. It calls for careful planning and a thorough knowledge of artisan and industrial processes, both traditional and otherwise. It also requires a healthy pinch of curiosity and openness. The Identità Golose Food Courts are a new bespoke concept tailormade for “supersalone,” conceived as an integral part of the visitor experience and an opportunity to savour the original recipes of some of the greatest Italian chefs and artisans, including Carlo Cracco with pastry chef Marco Pedron, Massimo Bottura with the workshop Il Tortellante, Michelin star chefs Cristina Bowerman and Matias Perdomo, Eugenio Boer, the Italo-Dutch chef renowned for the international influences that he weaves into his cuisine, as well as Renato Bosco, considered one of the greatest master of pizza, the great ice-cream maker Paolo Brunelli and Andrea Besuschio, who has been ranked among the top 10 best pastry chefs in Italy for years. Each of them will come up with an iconic dish – that will also serve to trigger reflection on the ongoing topics of debate – available to savour in the four food courts, one in each “supersalone” pavilion. Each food court has been conceived and designed to provide an array of gourmand dishes and products that can be acquired either to take away or be eaten on the spot, in an informal environment curated right down to the last detail, consisting of a circuit of eight different food stations and a large convivial area. The gastronomic creations on offer will be delicious and sophisticated, both sweet and savoury – an invitation to sample top quality cuisine at tempting prices, catering to every taste and requirement. With the Identità Golose Food Courts, “supersalone” has become the co-author of an inspirational project that involves Italian creative excellence in the realm of food, fostering a joyful, varied and successful way of making food an integral part of all the wonders on exhibit. 18 August 2021 Share
